Simple recipe using simple ingredients!
Serves 6
50g butter or dairy free spread, or a good lug of light oil - 1 onion, chopped
450g leeks, washed and sliced.
2 potatoes, peeled and chopped into cubes.
1L vegetable or chicken stock
Seasoning - 2-3 tablespoon cream (optional)
Melt the butter in a large pan, sauté the onion and leeks gently until soft.
Add the potatoes.
Cover and cook gently for a few minutes.
Stir in stock and season.
Cover and bring to the boil, then turn down to gentle heat for 20 - 30 mins until veg is cooked through.
Using a hand blender, do a few pulses so that soup is blended but there is still some texture and whole pieces of veg.
Check seasoning and swirl though cream to serve (if using)
