Pea Soup

Vibrant pea soup with fresh basil and mint. One of the easiest and quickest soups ever!!



Ingredients:

450g frozen peas

500ml vegetable stock

Small bunch of fresh basil (you can also add mint as well or instead) .


Method:

In a large saucepan, cook the peas in the stock until tender.

Roughly chop the herbs

Blend well in blender or with hand mixer, and season with salt and pepper to taste..


* A sprinkle of Parmesan is sometimes nice to serve with.

* If you like a thinner soup, add a little more water.
