I was first introduced to this recipe in a group baking class at a hen party but I think it has been floating around for a while. I was dubious at first having read the brief ingredients and method but was very pleasantly surprised!
These are super easy and quick to make, and are delicious for breakfast or dessert.
They are a great way to get children to eat fruit, and also happen to be dairy gluten and nut free.
Serves 1
Ingredients
1 banana, mashed
1 egg, whisked
Pinch of baking powder (optional)
Additions - blueberries, chocolate chips
Serving suggestions - yogurt, berries, maple syrup, nut butter
Method
Mix together the banana and egg.
Heat a pan over medium/high and wipe with a little oil.
Spoon in about 2 tablespoons of the mix at a time and cook for about 2 minutes on each side. (If adding blueberries or choc chips, add to top of the mixture after being spooned into the pan)
Serve hot with toppings of choice.
